5 Ingredient, Crock-Pot Tomato Soup

Well, fall is alive and well in Connecticut. Four days ago it was 75 degrees, and this week the high is ONLY 48 degrees. I’m freezing, but I’m living for these cozy fall days! πŸ‚πŸπŸŽƒ

I remember the first time I made homemade soup. I was blown away how easy it was to throw together real, wholesome ingredients. Goodbye cans, hello crock-pots and immersion blenders. If you’ve never made homemade soup, I really challenge you to try this year! It will change your life!

You could start with one of my favorites: Slow Cooker Roasted Tomato Soup by Fit Slow Cooker Queen.

The recipe is literally five ingredients: roma tomatoes, garlic, onion, vegetable broth and evoo. Roast the tomatoes, garlic and onion in the oven, then dump into the crockpot for 2 (on high) or 4 (on low) hoursΒ  Check out her amazing page for the recipe (paleo and Whole30-friendly)!
