4 Healthy Cookies for Christmas

Happy Christmas Eve! If you’re like me, it doesn’t feel like Christmas until you bake cookies. Last Thursday I cracked and decided to bake four batches of cookies while I simultaneously answered work calls and emails and did laundry and packed like the crazy woman I am.

We loaded the cookies up in the car and took off for Illinois! This year I found four cookie recipes that are delicious, and semi-healthy. I mean, they’re cookies after all. But they’re made with simple ingredients, like whole wheat flour, almond flour, maple syrup, coconut oil. With all the other indulgences we’d be enjoying this weekend, I figured these would do well. It’s all about balance.

Shortbread Almond Flour Cookies

These cookies were delicious and so, so easy.  Made with only five ingredients (almond flour, butter, maple syrup, almond extract, salt), you might have everything in your pantry already. We dipped these in dark chocolate and they were oh, so good.

Healthier M&M Cookies

These cookies have been a great hit! They taste slightly different since they’re made with whole wheat flour, but they’re still delicious. Always a great tip with chocolate chip cookies or any kind of candy cookie – top the cookie balls with extra M&Ms before you put them in the oven!

Raspberry Jam Thumbprint Cookies

I think of the four recipes, this was my favorite! The cookies are made with almonds and whole-grain flour, with just enough butter to make it rich and indulgent. The flavors are spot on with Linzer Tart, as well! The cookie also pairs well with coffee, BTW (it’s Christmas, so cookies for breakfast are acceptable, right).

Healthy Gingerbread Cookies

These cookies are such a fun play on traditional gingerbread, but not as sweet. The recipe includes healthy staples like whole wheat flour, coconut oil, maple syrup. My favorite part was the topping – pour honey on the cookie and top with cranberries, chopped pistachios and cranberries. SO GOOD.
