3 Recipes I Tried This Week

I don’t know about you, but usually my grocery cart always looks the same. Week after week, I tend to rotate out the same 10 or so recipes. During the week we try to stick to a consistent, healthy, lowish carb, mostly plant-based diet. But I like to switch it up every so often and experiment with new recipes!

Here are three recent dishes we tried (and loved):

The Best Brussels Sprouts


Recipe: The Hungry Bluebird

These were oh, so good. If you have a family member or friend who despises brussels sprouts, this is the recipe for them. The brussels are pan fried with a little butter and olive oil, then sweetened with tangy, caramelized Dijon mustard and honey.  I would (and will) make this again and again! Also it’s only five, easy ingredients you probably already have at home. Perfect as a side dish with salmon.


Butternut Squash Fries


Recipe: Kirbie Cravings 

One of our favorite weeknight dinners is butter lettuce wrapped burgers (Crowd Cow for James, Dr. Praeger’s for me) and some kind of squash fry. This helps satisfy any of our salty, fast food cravings. These butternut squash fries are sweet and savory – just make sure you don’t overcrowd your baking sheet (too much moisture = soggy fries).  I’ve had to try these a few times to figure out the perfect consistency. So good!


Spaghetti Squash Casserole


Recipe: Well Plated

This photo might not be the most appetizing, but let me tell you – this casserole is amazing. James says it tastes like pizza – ha, which I’m not so sure about. But it’s goooood. It might even be our favorite spaghetti squash dish ever. The recipe calls for ground turkey, but I use Upton’s Naturals Italian Seitan.
